Fish Taco Baja Style

The fish taco has its roots in Baja, Mexico. Its journey north began with surfers who brought the culinary tradition across the border into California. The dish's subsequent mainstream success across the United States is largely credited to the Rubio's chain. Founded in San Diego in 1983, Rubio's was inspired by the fish tacos their founder tasted in San Felipe, Baja California. They consist of a fried or grilled piece of fish wrapped in a corn tortilla and topped with spicy mayo and green salsa.

I was Executive Pastry Chef for two Hyatt Hotels and Resorts before completing two post-baccalaureate certificates for Visual Art and Graphic Design at U.C. Berkeley Extension in San Francisco.
