Winter Squash Galette

We developed and shot this recipe for Edible East Bay’s Winter 2025 issue. The object was to use winter seasonal ingredients with co-milled olive oil. Co-milled olive oil is a process where the olive oil miller combines their olive oil with another flavorful ingredient. In this case we were using the delicious Bondolio Mandarin extra virgin olive oil as a finishing oil drizzled on top before serving.

I was Executive Pastry Chef for two Hyatt Hotels and Resorts before completing two post-baccalaureate certificates for Visual Art and Graphic Design at U.C. Berkeley Extension in San Francisco.
